Deleting the app does not cancel the subscription. This is the single most common reason people keep getting charged.
Step 2 — Ask Apple for the charge back

Recent 1–2★ reviews of CapCut: Photo & Video Editor on the App Store, about billing:
I have lost more than 4,000 credits trying to generate projects with CapCut. Several projects crashed, stopped before completion, or produced incomplete videos, yet the credits were still deducted. When I tried again, CapCut charged me even more credits for the same unfinished work. Users should not be charged when CapCut’s system fails to complete a project. Losing thousands of paid credits because of repeated tech…
Six months ago, CapCut promised me a refund for my App Store purchase after I bought the professional software directly from them. After doing that, I’ve continued to request refunds and they continue to ask me to resubmit my request for a refund.
The app freezes every few minutes while I'm editing videos and then crashes; I have to keep reopening it. On top of that, I’m using the premium version at this rate, I’m going to cancel my subscription.

Questions
Can I get a refund after I already canceled CapCut: Photo & Video Editor?
Yes. Canceling stops future renewals but does not refund a charge that already went through. You request that separately at reportaproblem.apple.com, and "I was charged after I canceled the subscription" is the reason to select.
How long do I have to ask for a refund?
Apple generally expects refund requests within 90 days of the charge. Ask as soon as you notice it — requests on recent charges are approved more often.
Apple declined my request. Is that the end?
No. A first decline is common and is often automated. You can submit the request again with more specific facts and ask for review by a senior advisor. If it is declined again, you can dispute the charge with your card issuer.
Will I lose access to CapCut: Photo & Video Editor if I cancel?
You keep access until the end of the period you already paid for. Canceling only stops the next renewal.
